Rice and vegetable salad


  • 250 g rice,
  • 2 red bell peppers,
  • 2 yellow bell peppers,
  • 2 green bell peppers,
  • 3 carrots,
  • 50g black olives,
  • 2 tablespoons of capers,
  • 3 pickled cucumbers,
  • 2 tomatoes,
  • 0.5 dl oil,
  • juice of 2 lemons,
  • salt to taste,
  • pepper to taste.


  1. Cook rice in salted water, drain and wash with cold water.
  2. Cook carrots until soft.
  3. Chop bell peppers, carrots, olives, pickled cucumbers and tomatoes without seeds into cubes.
  4. Add the capers, oil, lemon juice, salt and pepper.
  5. All slowly stir with the rice.
  6. Serve cold.
