Ingredients:
- 250 g rice,
- 2 red bell peppers,
- 2 yellow bell peppers,
- 2 green bell peppers,
- 3 carrots,
- 50g black olives,
- 2 tablespoons of capers,
- 3 pickled cucumbers,
- 2 tomatoes,
- 0.5 dl oil,
- juice of 2 lemons,
- salt to taste,
- pepper to taste.
Preparation:
- Cook rice in salted water, drain and wash with cold water.
- Cook carrots until soft.
- Chop bell peppers, carrots, olives, pickled cucumbers and tomatoes without seeds into cubes.
- Add the capers, oil, lemon juice, salt and pepper.
- All slowly stir with the rice.
- Serve cold.
